HOURS PER WEEK: 40

POSITION DESCRIPTION:

Under the direction of the Production Lead of the We Ko Pa Casino Resort, Cook II for preparing a la carte food items, prep work, line cooking, and batch cooking, placing stock in appropriate locations and maintaining the highest cleanliness standards. Preparation of food items according to standard recipes and/or as specified by the chef to ensure consistency of product to the guest. Follow the detailed banquet prep list as written by the chef.

Read and understand banquet event orders (BEO).

Will produce the highest quality food items by menu and recipe requirements at all times. Must be able to work in all areas of need in the Food and Beverage Department as required by business demands.

• Accountable to all standards outlined in the We-Ko-Pa Way Casino Resort service guide.
• Under the supervision of the Production Lead, cooks and prepares food according to the menu and restaurant standards. 
• Contributes to a team effort and accomplishes related results as required.
• Reads, understands, and follows standards and recipe specifications for producing food items in all required outlets.
• Responsible for maintaining all food quality standards regarding food safety and time/temp control.
• Responsible for always maintaining a clean, organized, and sanitized area.  Adheres to all state, HIS, and departmental standards and regulations of health and food safety.
• Maintains positive communication with all co-workers, leads, and chefs.
• Responsible for maintaining food storage areas such as pantries, freezers, and refrigerators with labeled and dated items.
• Will administer a FIFO process of kitchen maintenance in all areas daily.
• Responsible for the maintenance and sanitation of all kitchen surfaces, floors, workstations, trash, equipment, and prep areas to ensure the highest cleanliness standards at all times.
• Will complete all required training as designated by the department and enterprise training.
• Must have a valid food handler’s permit and be Serve Safe certified.
• Performs other related duties as required.
• Must be able to lift more than 50 pounds and push or pull 100.
• Must be able to obtain and maintain a State/Tribal License (including an extensive background check).
• Must pass a pre-employment drug test.
• Must be 18 years of age.

WORK CONDITIONS:

• While performing the duties of this job, the employee is required to:
• Bend, reach, stand, and walk for 34-66% of the workday.
• Eye/hand coordination for 34-66% of the workday.
• Exposed to hot/cold temperatures for 34-66% of the workday.
• Exposed to dust for 1-33% of the workday.
• Sit for 1-33% of the workday.
• Must be able to obtain and maintain a State/Tribal License (including an extensive background check).
• While working on the casino floor, the employee is exposed to a high level of noise daily.

EDUCATION AND/OR EXPERIENCE:

Minimum requirement of 2 years of experience as a prep cook, kitchen utility, or line cook. This candidate must be motivated and follow all IHS and food safety guidelines.
