• Prepare mise en place accurately to recipe specifications
• Organize and execute plating across all seven courses, ensuring every detail lands as designed
• Plate each course with precision and artistry — presentation is the show
• Hold exacting timing throughout service; the pace is choreographed
• Adapt confidently to last-minute dietary restrictions and allergen needs
• Break down station cleanly — properly store leftover mise en place and return all tools

Skills, Knowledge and Expertise

• Fine dining and banquet experience strongly preferred
• Strong culinary talent.
• Sharp attention to detail and the discipline to repeat it flawlessly, night after night
• Calm under pressure with strong timing instincts
• Available evenings, seven days a week — shows run on varying nights but always at night
